Enjoy A Tasty Sandwich featuring Colombo Sourdough Bread!

Cashew Chicken

Ingredients:

  • 2 oz Armanino Pesto (thawed)
  • 4 oz shredded cooked chicken
  • 1 oz chopped cashews
  • 1 oz chopped celery
  • 1 T mayonnaise
  • 1 T sour cream
  • 2 slices Colombo sourdough bread

Spread both slices of bread with pesto. Mix all the other ingredients together and spread between slices of sourdough.


Spring Wrap

Ingredients:

  • 2 oz soft goat cheese
  • 2 oz Armanino Pesto (thawed)
  • 2 T dried cranberries
  • 1/2 c watercress
  • 3 spring onions sliced lengthwise
  • Colombo sourdough bread

Mix cheese, cranberries and pesto. Spread on bread. Roll around watercress and onions. Slice diagonally.


Pavo Roll

Ingredients:

  • 4 oz smoked deli turkey
  • 2 oz Armanino Pesto (thawed)
  • 3 T refried beans
  • 1 T chopped onion
  • 1 T diced bell pepper
  • 1 T diced Ortega chilies
  • Colombo steak roll

Toss turkey with pesto. Mix onion, pepper and chilies into beans. Spoon all into Colombo steak roll.


California Hero Sandwich

Ingredients:
  • 1 head iceberg lettuce
  • 1/2 cup plain yogurt
  • 1 tablespoon honey
  • 1 1/2 teaspoons poppy seed
  • 2 Colombo Steak Rolls
  • 2 tomatoes, sliced
  • 1 onion, sliced (about 8 slices)
  • 1 cucumber, sliced
  • 8 slices cheddar cheese
  • 8 ripe olives, sliced

Core, rinse and thoroughly drain lettuce; chill in a plastic bag or plastic crisper. At serving time, tear enough lettuce to layer lettuce on bottom half of the rolls. For dressing, mix yogurt, honey and poppy seed in small bowl.

Spread each slice with a layer of lettuce on bottom half and top with layers of tomato, onion, cheese, cucumber and olives. Spread yogurt dressing on top half of each roll and place on sandwich.

Cut sandwiches in half and pass remaining dressing. These sandwiches are also delicious on toasted Colombo French bread.

Makes four servings.


15 GOOD TASTING SANDWICH IDEAS

  1. Top one slice of new Colombo sourdough bread with fresh tomato slices, lettuce, sliced natural cheese and thin slices of ham or beef. Spread second bread slice with favorite mustard.
  2. Toast a slice of Colombo sourdough bread. Add shredded lettuce or alfalfa sprouts, slices of fresh tomato and a scoop or mound of tuna salad. Cover with a slice of natural cheese and broil just until cheese melts.
  3. Make a sandwich using slices of chicken or turkey, fresh tomato slices, lettuce of alfalfa sprouts with a dressing of sour cream, toasted almonds. Optional: sprinkle with dash of garlic salt.
  4. Top toasted slice of Colombo sourdough bread with avocado slices, bean sprouts, fresh tomato slices, and sliced natural cheese. Add 2 or 3 slices of bacon or sprinkle with crumbled bacon bits.
  5. Dieters will enjoy a slice of Colombo sourdough bread with low fat cottage cheese. Add a slice or two fresh tomato and sprinkle with basil or oregano. Broil until bubbly.
  6. Spread a slice of toasted Colombo sourdough bread with low fat cottage cheese. Add 2 or 3 sliced California dried figs. Sprinkle with cinnamon or nutmeg and broil until bubbly.
  7. Toast 2 slices of Colombo sourdough bread, fill with a hot breaded fish square and tomato slice. Add cole slaw or shredded lettuce. Optional: 2) add a slice of natural cheese, b) spread one slice of bread with tartar sauce
  8. Man-sized Broiler Franwiches: for each serving, toast one slice of Colombo sourdough bread on one side under broiler. Place toasted side down, on baking sheet. Top each with 3 lenthwise halves of frankfurters, then cheese slices and tomato slices. Broil until cheese bubbles.
  9. Mash 1 can tuna and mix with 3 tablespoons chopped chutney or sweet pickle relish. 2 mashed hard-cooked eggs, 1/4 cup chopped celery and 1 teaspoon lemon juice. Use plain yogurt to bind. Spread on slice of Colombo sourdough bread.
  10. Mash 1 cup sardines with 3 tablespoons margarine or butter blended with 1 teaspoon mustard and a few drops of lemon juice. Spread generously on Colombo sourdough bread slice, add lettuce and top with a second slice of bread.
